Homemade Zucchini Applesauce

There is that time during the summer when you have zucchini coming out of your ears and you are on the look out for creative ways to use them. Well add this one to the rotation! Discovered by my Mom (who would put vegetables in anything she can think of), and it was found that children do not notice shredded zucchini in the applesauce.

Now at my house where I am lazy and didn't peel or seed the zucchini they noticed, but ate it anyway! Perhaps they are used to me throwing veggies in everything....I learned from the best! So whether you are just looking for ways to use zucchini or have children that refuse to eat veggies, try this new way to use them! If you make applesauce a lot, you should consider getting an Apple Peeler, Slicer & Corer. It makes fast work of the apples and kids enjoy helping!

Homemade Zucchini Applesauce

Ingredients

(no measurements, just use more apples than zucchini)

  • Shredded zucchini (peel if desired, seed larger zucchini, use a food processor shredding attachment)
  • Apples (peeled if you want, cored, sliced and quartered)
  • Water to keep from sticking when it first starts cooking
  • Cinnamon (at end)

Directions

  • Place apples and zucchini in a saucepan or stock pot (depending on the amount) with the water.
  • Start cooking around medium heat to get going, then lower to low.
  • Stir often and add water if it is too dry.
  • Cook until desired consistancy (I prefer thick and chunky).
  • Add cinnamon. Cool, freeze, or enjoy warm (YUM!).

I have found that the containers with zucchini tend to not last quite a long in the fridge after you thaw them, so if you don't use a lot at a time, freeze in smaller containers.
